New Delhi, July 2023: Élan at The Lodhi, New Delhi – a DLF Hospitality product, brings to you an unmatched dining experience with their all-new menu. With an ingredient-first approach and an endeavour to work closely with local farmers, the menu extracts maximum flavours from the season’s freshest produce.
The menu has been engineered by Chef Dharmen Makawana, the Corporate Head Chef for DLF Hospitality, who comes with more than three decades of experience with global luxury brands, alongside The Lodhi’s Executive Chef Vijay Thapliyal and their exceptional team. Acclaimed for his culinary prowess, Chef Makawana has developed a commendable repertoire through his expertise acquired in launching menus for various hotels across the world. The curated new offering at Élan encapsulates cuisines from not only Western countries but also the Asian and Mediterranean communities. Using both traditional and cutting-edge techniques, the chefs deliver a symphony of eclectic and robust flavours through a mix of refreshing salads, one-bowl meals, shared plates, in-house desserts, and more.
To get the experience off to the best possible start, begin with the Organic Cous Cous and Quinoa Salad, and Poached Lobster and Morel Mushroom Soup. Moving onto small plates, must-try dishes include the Shanghai Shrimp Dumplings in hot and sour broth, and the New-Style Salmon Carpaccio accompanied by ponzu ginger, hot sesame oil, tobiko, and wonton crisp. Also available during lunch hours is the Elan Signature Poke Bowl which is the chef’s special recommendation. Highlights from the large plates include the Butternut Squash Ravioli, and the Peruvian-Style Half-Grilled Chicken with dauphine potato, vegetable mélange, and cilantro dressing.
The Indian section boasts coastal dishes inspired by home-style recipes like the Edamame Vagaryu tempered with cumin and curry leaves and served with kakkra, and Lamb Masur with tartless spiced mince frittata, saffron, almonds, cardamom, and tomato relish. Savour signature offerings from the wok such as Asparagus, Water Chestnut, Baby Corn with fermented Guilin chilli sauce, garlic crumbs, and Singapore Prawns and Mud Crab which come with chilli dipping sauce and wok-crisped homemade buns. Complete the meal on the perfect note with an indulgent selection of artisanally plated desserts.
